  • ½ cup all-purpose flour
  • ¼ cup cornmeal
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika optional
  • 2 tbsp unsalted butter
  • 2 tbsp vegetable oil
  • 1 lemon cut into wedges
  • Fresh parsley or dill for garnish

  • Pat the walleye fillets dry with a paper towel to remove excess moisture.
  • ✅ Step 2: Make the Dredging Mixture
  • In a shallow dish, mix flour, cornmeal, salt, black pepper, and paprika.

  • Dredge each fillet in the flour mixture, shaking off any excess.

  • In a large skillet, heat oil and butter over medium heat until shimmering.

  • Carefully place the fillets in the skillet. Cook for 4 minutes on one side until golden brown, then flip and cook for another 3–4 minutes.
