Instructions
 

  • Prepare the Marinade: In a medium bowl, whisk together ¼ cup olive oil, lemon juice, minced garlic, chopped parsley, salt, pepper, and paprika (if using). Let the mixture sit for 5-10 minutes to meld flavors.
  • Marinate the Wahoo: Place the wahoo fillets in a shallow dish or zip-top bag. Pour the marinade over the fish, ensuring all pieces are well-coated. Cover and refrigerate for 30 minutes (or up to 2 hours for deeper flavor).
  • Preheat the Grill: Heat your grill to medium-high (about 400°F/200°C). Lightly oil the grill grates with 1 tablespoon of olive oil using a paper towel and tongs to prevent sticking.
  • Grill the Wahoo: Remove the fillets from the marinade, letting excess drip off. Place them on the grill and cook for 4-5 minutes per side, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork. Avoid overcooking!
