1️⃣ Preheat and Prepare

  • Heat a large wok or deep skillet over high heat. Add 1 tbsp vegetable oil and let it shimmer.

2️⃣ Temper the Spices

  • Add fennel seeds, cinnamon stick, star anise, and cloves to the hot oil. Stir for 20 seconds until aromatic.

3️⃣ Scramble the Eggs

  • Push the spices to one side. Pour in the beaten eggs, let them set for a few seconds, then gently scramble. Once cooked, remove and set aside.

4️⃣ Sauté Aromatics & Vegetables

  • Add more oil if needed. Stir in onions, ginger-garlic paste, and green chilies. Sauté for 2–3 minutes until fragrant.

5️⃣ Incorporate the Rice

  • Add cooked rice to the wok, breaking apart any clumps. Season with salt, black pepper, red chili powder, and soy sauce drizzled around the edges.

6️⃣ Combine & Stir-Fry

  • Return the scrambled eggs to the wok and stir-fry everything on high heat for 2–3 minutes, tossing continuously.

7️⃣ Final Touches

  • Drizzle 1 tsp ghee for depth of flavor. Remove from heat and garnish with scallion greens and fresh coriander.

Notes

🔥 Pro Tips & Variations
✅ For authentic “wok hei” flavor, keep your heat high and stir quickly.
✅ Day-old rice ensures the best texture; fresh rice may turn mushy.
✅ Spice it up with red chili flakes or smoked paprika.
✅ Add more veggies like bell peppers or snap peas for extra crunch.
✅ Vegan alternative: Use tofu instead of eggs, and tamari instead of soy sauce.
